Lavaret (lavarello) is one of the most famous fish of Lake Garda and can be prepared fast and easily.

Due to its tender taste, lavaret can be grilled traditionally, char-grilled or baked in aluminium foil, as proposed here.

  • 4 lavarets
  • 1 onion
  • 1 celery
  • 1 carrot
  • 3 garlic cloves
  • a few basil leaves
  • extra virgin olive oil
  • salt and pepper to taste
  • decoration: cherry tomatoes and lemon slices

First clean the fish and dry well. Then cut it open and season with salt and pepper. Chop the onion, the carrot, the celery and the garlic, take one aluminium foil per fish, brush the fish with oil and fill it with the vegetable mixture, keeping apart some of it for later. Wrap the fish in aluminium foil and put it into a baking tray. Bake in the oven at 180° for roughly 5 minutes. Serve with cherry tomatoes and lemon slices.
