The chestnut is one of the many local products grown in the town of San Zeno di Montagna. It is the first product from this region to have received the protected designation of origin DOP (denominazione d’origine protetta). Chestnuts have always been used for sweet and savoury dishes and are the most important ingredient in the regional chestnut minestrone (soup).

Here is a simple recipe of peasant origin that is very popular and  known for its excellent flavour!

  • 100 g* potatoes
  • 80 g celery
  • 80 g carrots
  • 100 g onions
  • 100 g savoy cabbage
  • 50 g beans
  • 200 g chestnuts, cooked
  • salt and pepper to taste, extra virgin olive oil

Dice all the vegetables, put them in a pot and cover with water. Leave it to simmer for roughly two hours at medium heat and season with salt and pepper.
Once the vegetables are well cooked and the soup is almost creamy, add the previously cooked chestnuts as well as the olive oil .
Serve hot with croutons.
