A simple recipe for a spectacular dessert that is a typical product of the Lake Garda area, made from DOP chestnuts (denominazione di origine protetta – protected designation of origin) from San Zeno di Montagna.
- 700 g* chestnuts from San Zeno
- 150 g dark chocolate
- 150 g butter
- 130 g sugar
- 1 shot of rum
- 1 tsp vanilla
- 4 whole chestnuts
- cream and chocolate
With a knife, cut a cross across the flat side of each chestnut. Then put the chestnuts into a saucepan, bring to the boil and simmer for 25 minutes.
Then let the chestnuts drain and peel them while hot, putting 4 aside for the decoration. Put the chestnuts in a food processor and blend to a purée. You can also use a potato masher.
Melt the dark chocolate using the double-boiler method until the mixture becomes creamy. Add the butter and melt while stirring. Add the sugar, the butter-chocolate mixture, the vanilla and the rum, to the chestnut purée and mix all ingredients, until the mixture is smooth and homogeneous.
Put the mixture in glasses until these are ¾ full. Let it cool at room temperature, before putting it in the fridge for about an hour. Decorate with whipped cream, chocolate chips and the chestnuts.
