Celebrate carnival with this sweet crisp pastry!
The so-called galani, deep-fried angel wings, belong to a group of similar pastries typical of carnival, like the chiacchiere . These go by different regional names, amongst others cenci (Tuscany), frappe (Rome) and crostoli (Friuli), and each differ a little from the basic recipe. In Verona and its surroundings the flavorsome galani and tasty fritole (Veronese for small doughnuts typical of carnival) are eaten throughout the season.

    • 500 g* flour
    • 3 eggs
    • ½  glass of Soave wine
    • 60 g butter
    • 120 g sugar
    • zest of 2 oranges and 1 lemon
    • 1 sachet of vanilla sugar
    • icing sugar
    • linseed oil to deep-fry
    • 1 pinch of salt

Put flour in a bowl, making a well for all the other ingredients. Mix all the ingredients, cover the dough with a tea towel and let it rest for approximately an hour. Roll the dough out to 2 mm thickness and cut it out in a rectangular or lozenge shape. Heat the oil and fry the galani/angel wings until golden. Drain them on a tray covered with paper towels, then dust with icing sugar.
